Two Warm-Your-Stomach Recipes for Fall

Two of my recent recipes, Huevos Rancheros and Barbecued Salmon and Grilled Pineapple Sandwich, are the perfect comfort foods for the change of seasons.

Huevos Rancheros is a popular, traditional Mexican dish served at breakfast (but don’t let that stop you from eating it for lunch or dinner!). I use tortilla chips instead of tortillas flatbreads in my version, and it adds a nice crunch to the taste. The black beans simmered in a seasoned chicken broth of cumin, coriander and chili powder really add an extra layer of warm goodness on a cold morning.

The Barbecued Salmon and Grilled Pineapple Sandwich is another hearty meal that has a sweet and savory contrast with the fish and fruit. The BBQ sauce consists of a mix of ketchup, honey, ancho chili powder, chipotle pepper and vinegar. If you are tired of BLTs or Reubens, this is a recipe you will want to try for a break from the usual.
